The recipes on this web page are healthy (sorry if that disappoints you.) Most of the recipes will work with the Core program on Weight Watchers. The Core program is an older program of Weight Watchers. Weight Watchers introduces new ideas to their program every year and about two years ago, they did away with the Core and Flex programs, per se. The Flex program utilized Weight Watcher points, while the Core program utilized eating only “filling” foods (healthy foods that satisfy you so you won't overeat.) For years, I only followed the Flex program because I was afraid I would abuse the freedom of the Core program. But in the attempt to “shake” up my weight loss, I tried the Core program and it worked for me. Weight Watchers' current program combines both of these older programs (Flex and Core) by encouraging its members to utilize points but emphasizes to use many of the points for “filling” foods. Since the Core program has been successful for me, I continue to follow it.

For me, the best food is healthy food, and I have found some great healthy recipes that work well with the Core program. The following recipes are ones I have made a lot and enjoy immensely. Let me know if you try any of them and what your thoughts are. Enjoy!

Skillet Lasagna (WW Core)

Ingredients
1 lb 93% lean ground beef
1 small onion, chopped
1 minced garlic clove
(I add mushrooms and chopped green pepper also)
1 1/2 cups diced tomatoes, do not drain
1 1/4 cups water
1 (8 ounce) can tomato sauce
1 tablespoon dried parsley flakes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
2 1/2 cups whole wheat macaroni, uncooked
1 cup fat-free cottage cheese
1/4 cup grated fat-free parmesan cheese
1 dash basil
1 dash pepper
3/4 cup shredded fat free mozzarella cheese

Directions
1. In large skillet, brown beef with onions and garlic then drain.
2. Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt into hamburger mixture and mix well.
3. Stir in uncooked pasta.
4. Bring mixture to a boil, stirring occasionally.
5. Reduce heat, then cover, simmer for 20 minutes or until pasta is tender, stirring once.
6. In a medium size bowl, combine cottage cheese and Parmesan cheese.
7. If desired, sprinkle in basil and pepper to taste.
8. Mix cheese mixture.
9. Drop cheese mixture by rounded tablespoons onto pasta mixture in skillet.
10.Cover and cook for 5 minutes.
11.Sprinkle with shredded mozzarella, if desired.


Spaghetti Sauce (WW Core)

Ingredients
1 tablespoon olive oil
1/2 medium onion, finely chopped
1 lb mushroom, sliced
1 teaspoon dried parsley
2 teaspoons garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
28 ounces crushed tomatoes (I use diced)
6 ounces tomato paste
salt
pepper
(I also brown 96% lean ground beef and add the beef, along with mushrooms and diced green pepper.)

Directions
1. Heat olive oil in a large skillet on medium heat.
Add the chopped onion, mushrooms, garlic, and herbs.
2. Cook until onions are transparent and liquid is reduced.
3. Reduce the heat to low, add tomatoes and tomato paste.
4. Cover the skillet and cook for 15 to 20 minutes, stirring occasionally.
Add salt and pepper to taste.


Berry Crisp (WW Core)

Fruit
1 (16 ounce) bag frozen mixed berries or cherries or blueberries
1 (7/8 ounce) box jello sugar-free vanilla pudding mix, cook and serve
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup nonfat milk

Crisp
1 1/2 cups old fashioned oats
1/2 cup Splenda sugar substitute
8 ounces plain fat-free yogurt
1 teaspoon almond extract

Tastes great with Fat Free Cool Whip!


"Blizzard" (WW Core)

8 oz. skim milk
1 cup (or more) ice
1-2 Tbsp. dry FF pudding mix (flavor of choice)
2 Tbsp. FF cool whip

Blend in blender until thick and creamy! So good!


Crustless Pumpkin Pie (WW Core)

2 c. pumpkin
3/4 c. splenda
1/4 tsp. salt
1 c. skim milk
2 eggs or 1/2 c. egg beaters
1 tsp. vanilla
1 tsp. pumpkin pie spice

Mix all ingredients adding milk last.Pour into sprayed 9" pie pan. Bake at 350 degrees for 55 minutes.Top with 2 Tbsp. of FF cool whip if desired.
